Sovereign Saffron Salmon*

*Available from 4 May, Rolleston’s Quartz Head Chef Dash has always been intrigued by the treasured spice saffron. Inspired by West Melton saffron suppliers Lassad Saffron and salmon from Hororata’s Sovereign Salmon, Dash crafted a rich and tasty Sovereign Saffron Salmon dish.  

This gluten free meal combines crispy pan fried salmon with edamame beans and shallots cooked in a chicken broth and served with a house made potato, kūmara and carrot gratin. 

Saffron is combined with sweet vanilla to create a creamy sauce which coats the dish, leaving your taste buds dancing.
